Fresh Watermelon Salad

You should have fresh fruit everyday! 

Apples & Bananas are the easiest to have on hand without going bad. If I'm doing a fruit salad, I do my best to eat the fruit I buy within 2 days of purchase. No one likes pulling out moldy fruit, yuck. 

Fruit salads are SUPER EASY. And you can use whatever fruit you want/what's in season. 

In the summer, I use a watermelon base a lot of the time. It's so good paired with all sorts of other fruits. For this salad, I started with watermelon, then added kiwi, chopped red onion, goat cheese and drizzled balsamic on top! YUM. 

Mix and match whatever fruits, cheese, veggies you have on hand - so many awesome combinations. Another fav is apple, mandarin oranges, slivered almonds, white cheddar and/or bleu cheese. Enjoy :)

Burger In A Bowl

I'm always in the mood for a good cheeseburger. Favorite places in the Triangle for burgers: Chuck's, Mo Joe's & Burger Fi! Besides my own kitchen, those places have got burgers on lock. 

One thing you don't see at burger joints as much is cheese within the burger. Instead of placing a slab of cheddar on top, I like my cheese throughout the burger. My new fav shredded cheese is Kraft's Triple Cheddar with Philadelphia Cream Cream, holy crap that stuff is good. 

Just because you're not eating carbs doesn't mean you can't enjoy all the other good things burgers have to offer. Thus, I created The Burger in a Bowl! 

My burgers are complete with lettuce, mayo, pickles, triple cheddar cheese, pimento cheese, sriracha honey bacon & a fried egg. Top with your favorite condiment and chop it up like a salad... but believe me the taste is far from your typical salad.

Roasted Parmesan Mushrooms & Zoodles

One thing I absolutely LOVE, is pasta. Italian food is a weakness of mine... the sauce, the garlic, the yummy carb overload! Something I find interesting is that even though pasta tastes so good, it really weighs you down. Even into the next day, not only does the scale weigh heavier, I feel sluggish and weighed down in general. 

I'm no saint, on weekends & cheat days I'm all about the pasta, pizza, bread... YUM. But seriously, I crave that stuff everyday of the week. 

It's kind of my thing, to "fake" the good stuff, it really gets me through the week without having major cravings. One of my favorite appliances is my SPIRALIZER! That shit makes everything pasta. Just sub noodles for zucchini, in this case. 

My secret to a great healthy dish is layers of different and delicious textures. For this dish, we start with a zucchini noodle base, layer homemade sauce, top with roasted mushrooms & parm cheese to finish! Enjoy!
